Yummy Recipe-too good not to share

Thanks Laura for sharing this DELICIOUS and HEALTHY recipe to my family!  My kids ask for it now every week and it is FILLED with tons of veggies :)   Too good not to share with all my Savvy Mommas out there.

Ingredients:

1 lb ground sausage, beef or turkey

1 chopped squash, 1 chopped bell pepper, 3 chopped celery sticks, 1/3 copped onion

1 jar tomato sauce

1 large sweet potato-shredded with cheese shredder

3 eggs stired

brown the meat in large skillet, add all chopped veggies and sautee til soft, throw in shredded sweet potato and 3 eggs, stir

put all ingredients into casserole dish, bake on 350 for 30 minutes

How’s that for easy, healthy, and yummy!  Enough for leftovers too!  And your kids get 6 different veggies that meal

Soup Season is HERE!!

Finally!!!  A blast of cold air has arrived :)   I can pull out jackets and sweaters for the first time this season!!!  I’m one happy momma :)   This also means it is officially soup season at our house.  This is the easiest way for me to get the kids to eat their vegetables and they don’t complain.  So, I thought I would give your the kids favorite soup recipe we make at our house.  Enjoy!

Chicken Tortilla Soup:

3 stalks of celery chopped, 1 bell pepper chopped, 1/2 onion chopped, handful of chopped carrots-saute these in the bottom of the soup pan with a dab  of olive oil for about 10 minutes.  Add in 1 rotisserie chicken chopped up, 1 can of diced tomatoes, 1 can of corn(drained) and 2 cans of chicken broth.  Throw in 2 cups of water.  Let it simmer and top with fresh cilantro, a sqeeze of lime, shredded cheese and slice of avacado.  YUMMY!!!

Yes! Cranberry Relish and Turkey Season is approaching! 

On that fine Turkey Day when all are busily baking…keep your children merrily making with a simple cranberry and popcorn garland.
Lay out a bowl of cranberries for each garland maker and a big bowl of popcorn in the center of the table for all to share.  Thread a long piece of dental floss onto a large, fat needle (little hands may need some supervision).

Now, you know the routine…cranberry, cranberry, cranberry, popcorn, popcorn, cranberry, cranberry, cranberry… and so it goes.  Have your child create her own garland pattern. 

Go outside and find the perfect tree upon which to lay your Thanksgiving Bird Feast.  Your child will be particularly thrilled they get to feed the cold little birdies while you all indulge in the cranberry sauce and stuffing inside.
